ETHICA RESTAURANT: The sustainable restaurant in The Hague


Sustainability

Sustainability is the basis of our concept. We stack all our building blocks on that foundation and work towards a better world. We test every decision we make against this basic condition. This applies to the products we use for delicious cooking, the materials we use in the restaurant and also the lasting relationships we maintain with our suppliers, employees and of course our guests.


Local 

Our immediate area has so much to offer! 80% of our dishes are vegetable and 20% prepared with animals that are in surplus in the Netherlands. You can think of the Schiphol goose, crayfish, roe deer and wild boar. We have two vegetable gardens where we grow our products and in and around the restaurant there are our own fruit trees, herb plants and cultivated vegetables; it doesn't get more local!


Home-made 

We make as much as possible ourselves; such as beer, soft drinks and other drinks. Products such as tempeh, soy sauce, kimchi and fish sauce are also made in the restaurant. As a result, we not only influence the taste, but we also know exactly what the origin of the ingredients is and whether they are sustainably produced.


Sustainability 

We strive to achieve a sustainable impact every year by embracing various great initiatives listed below.


CLEAN DRINKING WATER

Transporting water in bottles that are discarded as waste as soon as they are empty, while we can also tap it on site is just a shame. Bee Ethica we do this differently. With our EcoTapwater we can tap both still and sparkling water on location. Part of the proceeds goes to improving drinking water facilities for Kenyan orphan girls. Also has Ethica Restaurant de Dopper Wave signed and we fight against disposable water bottles. 


LOCAL PARTNERSHIPS

Local partnerships are extremely important to us. There is so much talent, knowledge and expertise in our neighborhood and we are happy to make use of it! Joining forces together to create something beautiful. In addition, this also makes a significant difference in CO2 emissions.


MR LEFFERS BREAD

Meneer Leffers' traditional sourdough bread only contains flour, water and salt. The basic ingredient is 100% organic grain that is ground in the mill. No yeast is used, because Mr. Leffers' bread rises as a result of natural fermentation. The optimal proportions of the ingredients, the long rising time of 24 to 36 hours and the special treatment of the dough ensure the specific structure and special taste of this sourdough bread. 

In combination with our homemade herb oil, Meneer Leffers' organic sourdough bread is a delicious snack!


HAGUE CROQUETTERY

A new brand with old roots. The snacks of the Haagsche Croquetterij are based on the cookbook 'Recepten van de Haagsche Kookschool' from 1895. A Haagsche snack with Haagsche nostalgia. Moreover, their products are prepared with sustainable ingredients from the region. The cheese comes from the farm on the edge of the royal city and vegetables from nearby 'Westland'.

Local, traditional and prepared with pride, but above all: Hague!


LOCAL SUPPLIERS

We work with several local suppliers from The Hague. So local that Mr. Tas comes to deliver the crayfish for the bisque by bike! Or the organic cheese farmer who visits the BeNeLux for the tastiest organic cheeses.


A SUSTAINABLE DRINK

Finding organic fruit and vegetables is not that difficult anymore, but finding more sustainable drinks is another story. We seek out the best products from companies that really want to make a difference. Dik&Schil's circular gin is one of those, a circular gin made with orange peels from the catering industry. And of course not to forget: our homemade syrups and liqueurs such as the limoncello or the orangecello with ginger. 


PACKING MATERIAL

We believe that too often too much is packaged in plastic. That is why we take a critical look at how our suppliers package their products and we no longer use plastic at all in our table service: a homemade biscuit on a saucer with your coffee, second-hand teaspoons and sugar we buy in bulk. 


TO CLEAN

Within the hospitality industry it is important that everything is clean and hygienic. We also think it is very important that we do not use products that are harmful to nature when cleaning. We have therefore consciously chosen to only work with sustainable cleaning products. These are also supplied in refillable packaging to eliminate as much unnecessary packaging material as possible. For a clean Ethica and a clean environment.
