Tiramisu

Tiramisu is a classic Italian dessert that means “pull me up,” referring to the energizing ingredients like coffee and sugar. Here’s an easy and delicious tiramisu recipe:

Ingredients:

  • 3 egg yolks
  • 75 grams fine granulated sugar
  • 250 grams mascarpone
  • 1 teaspoon of vanilla extract
  • 200 ml strong coffee, cooled
  • 3 tablespoons coffee liqueur (e.g. Tia Maria or Amaretto), optional
  • 200 grams ladyfingers (biscuits)
  • Cocoa powder, for dusting
  • 200 ml cream
  • A pinch of salt
  • Dark chocolate (optional, for shaving)

Instructions:

  1. Egg yolks and sugar: In a heatproof bowl, beat the egg yolks and sugar over a pan of gently simmering water (au bain-marie) until the mixture is light and fluffy. This takes about 5 minutes.
  2. Add mascarpone: Remove the bowl from the heat and add the mascarpone. Mix well until smooth. Add the vanilla extract and mix again.
  3. Whip the cream: In another bowl, whip the cream with a pinch of salt until it forms soft peaks. Gently fold the whipped cream into the mascarpone mixture.
  4. Coffee blend: In a shallow dish, mix the cooled coffee and coffee liqueur (if using).
  5. Dip long fingers: Quickly dip each cookie into the coffee mixture so they are soaked but not falling apart. Place a layer of the soaked biscuits in the bottom of a serving dish.
  6. documents: Divide half of the mascarpone mixture over the cookies and smooth it out with a spatula. Repeat the layers with the remaining biscuits and mascarpone mixture.
