Ingredients:
- 3 egg yolks
- 75 grams fine granulated sugar

Instructions:
- Egg yolks and sugar: In a heatproof bowl, beat the egg yolks and sugar over a pan of gently simmering water (au bain-marie) until the mixture is light and fluffy. This takes about 5 minutes.
- Add mascarpone: Remove the bowl from the heat and add the mascarpone. Mix well until smooth. Add the vanilla extract and mix again.
